Ingredients
Scale
- 1 lb (450 g) shrimp, large, peeled and deveined
- 2 large eggs, beaten
- ½ cup (65 g or 120 ml) all-purpose flour
- ½ cup (65 g or 120 ml) cornstarch
- ½ cup (120 ml) mayonnaise
- ¼ cup (60 ml) sweet chili sauce
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp sriracha
- 1 tbsp honey
- 2 tbsps green onions, thinly sliced
- 1 tbsp sesame seeds
- Vegetable oil (for frying)
Instructions
- Sauce Preparation: Whisk mayonnaise, sweet chili sauce, sriracha, and honey in a mixing bowl until smooth. Adjust seasoning to taste and set aside.
- Shrimp Coating: Thoroughly dry shrimp with paper towels. Create a dredging station with seasoned flour mixture (flour, cornstarch, garlic powder, smoked paprika, salt, pepper) and a separate dish of beaten eggs. Coat each shrimp by dipping in flour, then eggs, and finally flour again, ensuring complete coverage.
- Frying Process: Heat oil in a deep skillet to 350F (175C). Carefully fry shrimp in small batches until golden and crispy, approximately 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels to remove excess oil.
- Finishing Touch: Transfer crispy shrimp to a large bowl and gently toss with prepared Bang Bang sauce, ensuring even coating. Plate the sauced shrimp and garnish with freshly chopped green onions and a sprinkle of sesame seeds. Serve immediately to maintain optimal crispiness and flavor.
Notes
- Moisture Control: Thoroughly pat shrimp completely dry before coating to guarantee ultra-crispy texture and prevent soggy breading.
- Temperature Precision: Maintain consistent oil temperature at 350F using a kitchen thermometer to achieve perfectly golden, evenly cooked shrimp without burning.
- Batch Frying Strategy: Cook shrimp in small batches to prevent overcrowding, ensuring each piece gets crisp and maintains optimal oil temperature.
- Sauce Customization: Adjust Bang Bang sauce heat levels by modifying sriracha quantity – less for mild, more for spicy lovers or dietary preferences like keto or gluten-free adaptations.
