Description

Copycat Cheesecake Factory shrimp scampi linguine brings restaurant-quality seafood pasta to home kitchens. Garlic-infused butter sauce and succulent shrimp create a restaurant-worthy dish you can easily master at home.

Ingredients

Scale
  • 1 lb (450g) large shrimp, peeled and deveined
  • 12 oz (340g) linguine
  • 4 cloves garlic, minced
  • 3 tbsps unsalted butter
  • 2 tbsps olive oil
  • 1 tbsp olive oil
  • ¼ cup (60ml) dry white wine (such as Sauvignon Blanc)
  • ¼ cup (60ml) chicken or vegetable broth
  • ¼ cup (60ml) freshly squeezed lemon juice
  • ½ cup (120ml) heavy cream (optional, for a richer sauce)
  • ¼ cup (25g) grated Parmesan cheese
  • 2 tbsps fresh parsley, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 1 tsp lemon zest
  • ½ tsp salt (for boiling water)
  • Salt and pepper to taste

Instructions

  1. Pasta Preparation: Bring a large pot of heavily salted water to a vigorous boil. Cook linguine until al dente, reserving 1/2 cup of starchy water before draining. Lightly coat pasta with olive oil to prevent sticking.
  2. Shrimp Searing: Season shrimp with salt, pepper, and red pepper flakes. In a large skillet over medium heat, sauté shrimp in olive oil until they turn pink and translucent. Transfer cooked shrimp to a separate plate.
  3. Sauce Foundation: Using the same skillet, melt butter and quickly sauté minced garlic. Pour in white wine and broth, scraping up any caramelized bits. Reduce liquid to concentrate flavors, creating a rich base.
  4. Sauce Refinement: Add lemon juice and zest to brighten the sauce. Incorporate heavy cream, stirring until smooth and velvety. Fold linguine into the sauce, ensuring complete coverage and flavor absorption.
  5. Final Assembly: Integrate Parmesan cheese and chopped parsley throughout the dish. Return shrimp to the skillet, warming them gently. Adjust sauce consistency with reserved pasta water if needed.
  6. Plating and Presentation: Elegantly arrange linguine and shrimp on serving plates. Garnish with additional Parmesan, fresh parsley, and a lemon wedge. Serve immediately while piping hot.

Notes

  • Master Pasta Water: Reserve starchy cooking liquid to adjust sauce consistency and enhance overall flavor binding.
  • Control Shrimp Cooking: Sear briefly over medium heat to prevent rubbery texture, ensuring translucent pink centers indicate perfect doneness.
  • Balance Sauce Consistency: Add cream gradually and stir constantly to prevent separation, creating smooth, silky sauce without curdling.
  • Herb and Cheese Freshness: Sprinkle Parmesan and parsley just before serving to maintain vibrant color and maximize aromatic impact.
